较熟的豆呈褐色 ,就只能取出种子做食料。要保持小臭豆的清脆可口,避免炒过久,煮太熟营养也会流失。
Tips
Mature Petai is slightly brownies and only its seeds are useable for cooking. Overcooked Petai might cause the lost of its nutrition and crunchiness.



材料:银合欢50克、江鱼仔20克、指天椒4条 (剖半)、大葱 1/2粒、蒜头3颗、姜 (切丝)。
调味料:盐适量

Ingredients: 50g Small Petai, 20g Anchovy, 4 Bird Eye Chilies (halves), ½ clove Onion, 3 cloves Garlic, Ginger (shredded).
Seasoning: Salt

作法

  1. 把银合欢豆里头的种子取出,较青嫩的豆荚则连种子一起切小块备用。
  2. 烧热少 油先炒脆江鱼仔,再把剁碎的蒜米、洋葱丝和指天椒倒入,下调味料炒香。
  3. 加入银合欢兜匀,加入少 清水,即可盛碟。

Methods

  1. Cubed the Petai. Too mature Petai just use its seeds.
  2. Heat the cooking oil in the preheat wok, fry the Anchovy, toss in the chopped garlic, onions slices, Bird eye chilies and shredded ginger with seasoning, fry till fragrant.
  3. Add the cubed Petai, stir fry well some water. Serve.
